Hide field values from drop-down lists so that they are no longer available to users

Drop-down lists can become quite long when lots of field values are added and the list can become very busy for users making it difficult to find the right value. As time goes by and processes move on, many of these values become redundant but we cannot simply delete them as they are used in archived records.

An admin user should be able to hide field values so that they are no longer displayed in the drop-down so users can no longer select them. These values should not be deleted as they are still used for records.
